One half of the sibling duo behind the legendary Calvados Adrien Camut has gifted us with this magical elixir, a supercharged Pommeau created by reducing apple juice and must by half over an open fire and then fortifying it with 4 year old Calvados. It’s deep and dark, a liquid Tarte Tatin bursting with roasted apple, balsamic vinegar and buttery pastry crust, cresting with a flash of acid and apple skin tannin.
